Roast Pork with Easy to Ignore Instructions

The Big Bits:

100% NZ Pork rolled shoulder, leg or roast

The Little Bits:

3 tbs sea salt

2 tbs olive oil

4 tbs vinegar

2 tbs dried sage

2 tbs dried thyme

Salt and pepper

Serves 6


  1. Preheat oven to 230°C
  2. Score the skin, once cm apart with Stanley Knife
  3. Rub sea Salt into skin
  4. Then massage oil and vinegar
  5. Combine sage, thyme, salt and pepper and rub into skinless side, covering well
  6. Place pork, skin side up, in oven tray and cook for 30 minutes at 230°C
  7. Turn oven down to 160°C and cook for a further 45 mins per 500g
  8. When done, remove pork and let it rest 10 mins before carving.
  9. Serve with roast kumara and spuds and even some green vegies

Laps are not tables. So don't even bother.

Get the table sorted before you cook. Otherwise your genius creation will sit there, going cold.

Washing the damn dishes.

It sucks. There's no getting around it.

But leaving it to others will undo all the good work you've done.

So harden up, and put those rubber gloves on baby. Yes, the pink ones.

No-one likes a one hit wonder.
